What It Is
Mace is the lacy aril that surrounds the nutmeg seed inside the fruit of Myristica fragrans. Once dried, the bright red aril turns amber and is sold as whole blades.
Taste & Aroma
Warm and sweet like nutmeg, but more delicate, slightly peppery and gently citrusy.
How to Use
- Infuse whole blades in cream sauces, soups and stocks, then remove before serving.
- Grind for cakes, biscuits, doughnuts and spiced breads.
