Whole Sri Lankan mace, the delicate aromatic partner to nutmeg, with a lighter, more refined spice profile that works beautifully in both savory and sweet cooking.

What It Is

Mace is the lacy aril that surrounds the nutmeg seed inside the fruit of Myristica fragrans. Once dried, the bright red aril turns amber and is sold as whole blades.

Taste & Aroma

Warm and sweet like nutmeg, but more delicate, slightly peppery and gently citrusy.

How to Use

  • Infuse whole blades in cream sauces, soups and stocks, then remove before serving.
  • Grind for cakes, biscuits, doughnuts and spiced breads.
  • Add to curries, biryanis, pilafs and savory spice blends.
  • Use in pickling spice, charcuterie and slow-cooked dishes.

Nutmeg & Mace

Both come from the same fruit. Nutmeg is the seed; mace is the aril around it. Nutmeg is rounder and more robust, while mace is lighter and more elegant.

Storage & Freshness

Keep airtight in a cool, dry cupboard away from direct light and moisture. Grind only what you need or infuse the blades whole.
